The deoxyribonuclease from beef pancreas, is an endonuclease, splitting phosphodiester linkages, adjacent to a pyrimidine nucleotide yielding 5'-phosphate terminated polynucleotides with a free hydroxyl group on position 3'. It is activated by bivalent metals and maximum activation is attained with Mg2+ plus Ca2+. Our elastase is a serine protease that also hydrolyses amides and esters. It is produced in the pancreas as an inactive zymogen, proelastase, and activated in the duodenum by trypsin. The collagenases are endopeptidases that digest native collagen in the triple helix region. These are the major fibrous components of animal extracellular connective tissue.
